My favourite refreshing summer rosé spritz

I’m breaking a few rules with my rosé spritz, but trust me, it’s refreshing and delicious, and you’re going to love it! And anyway, some rules are just meant to be broken.

When using rosé in a cocktail (yes you can use wine in a cocktail!), pick something simple and fresh – save your premium rosés to enjoy solo.

Now, the 3,2,1 rule is used to make spritz drinks like an Aperol, with 3 parts sparkling wine, 2 parts Aperol, and 1 part soda. But I’m looking for something fresh and less sweet. So for my rosé spritz, we’re going in with 3 parts dry rosé, 1 part elderflower liqueur, and topping it up with 2 parts soda.

Finishing with strawberries to bring out the berry flavours in the rosé and a slice of lemon for a little zing. Summer perfection in a glass.
