I’m pairing a rich and creamy white Rioja with my 10 minute cheat Paella.
Start by soaking saffron strands in warm water, then add chicken stock.
In a large pan add garlic, diced chicken, chorizo, sliced red peppers.
then the cheat part - microwaveable rice, then the saffron stock, salt and peas.
Allow to simmer and finally add fresh prawns. Finish with chopped parsley and lemon wedges.
And we are ready to serve!
A great idea if you’re in a hurry but fancy something flavoursome with winning Spanish white.
