Fritto misto and Etna Bianco

Here’s a wine and food pairing that’ll instantly transport you to the Mediterranean. The 2020 Normanno Ciello Bianco, an organic, dry white wine from Sicily with a simple fritto misto.


This wine’s vibrant flavours of lemon and ripe apple with its fresh, mineral finish really lifts this crunchy, fried dish. 


To make:

Start with the batter, combine corn flour, plain flour, baking powder, salt, pepper and lemon zest. 

Slowly whisk in the fizzy water until you have a double cream consistency.  

Dip the seafood and courgette into the batter and fry until golden. 

Place on paper towel to drain the excess oil and add salt. 

For a quick sauce, combine garlic, mayo and lemon juice. 

And Pronto…we are ready to serve!
